Esterházy (side dish)

Esterházy refers to a side dish made from leeks , celery and carrots (carrots). The latter two are peeled and julienne , while the leek is first divided into pieces the length of the former ingredients, washed and cut into thin strips. The side dish is cooked by combining in a pan with melted butter and added to the sauce just before serving the roast (main component of the meal).
