Fine bread
A fine bread is a very light mixed wheat bread , with light flours being predominantly used. The crumb has a fine structure and the crust is strong. Due to the rye content, the freshness and storage are better than white bread .
The term is not defined in the guidelines for bread and baked goods . Variants with dark rye flour are also common.
