Fløtemysost

The fløtemysost ( Rahmmolkenkäse ) is a semi-solid Norwegian cheese that the Brown cheese belongs. During production, whey is mixed with cream and cow's milk and boiled down until the milk sugar caramelizes. The cheese tastes like all whey cheese sweetish caramel with a slightly sour note. Since no goat milk is used, it is milder than other types of brown cheese.

The fat content of the classic variety is 33%. There is also a reduced-fat and a heavily sweetened variant.
