Gari (African cuisine)
Gari is a cassava product from Africa.
The peeled, washed and grated tubers are packed in sacks for fermentation and dried after a few days. This creates a light powder that can be stored for a long time. Like instant polenta, it can be mixed with hot water to make a paste. The taste is neutral and slightly acidic.
In West Africa, Gari is the main processing of cassava.
