Tapioca or tapioca starch is an almost tasteless starch that is made from the processed and dried cassava root . The main component of tapioca is amylopectin with about 80%. The amylose content is around 20%. The term tapioca may only be used for a product made from manioc starch.

Tapioca can be used as an ingredient in cooking , similar to potato or corn starch or sago . It comes in the form of fine powder, white starch globules ( pearl tapioca ) or thin flakes.

The pellets, which are soaked before use, are an often used ingredient in West Africa and in East and Southeast Asian cuisine, especially in desserts . So-called bubble tea , a mixture mainly of tea, milk and tapioca balls, is also enjoying some popularity in Asia . In Brazil , tapioca flour is made into a flat cake in the pan , which is filled with butter , cheese , meat , sweetened condensed milk or coconut milk . Tapioca starch is also often used as a sauce binder and as a binder in tablet production. Occasionally tapioca is also used in snacks and gummy candies .

In the feed production Tapioca is an important kohlenhydratliefernde component. Under high pressure it gelatinizes during the production of feed pellets . This prevents the pellets from disintegrating again after cooling.

The Portuguese word tapioca comes from the Tupi language : typyóka .
