The Bischoff grade was a unit used primarily in Berlin to determine the density of milk and is derived from the hydrometer of the same name constructed by Bischoff , which was also known under the name of the Polizeilicher Milchprober . The Bischoff hydrometer works on the same principle as that of Quevenne , except that the scale does not show the whole, but only half of the excess milk density at 15 ° C above the density of 1 g / cm³.
