Grottino

Grottino (grotto cheese) is a naturally ripened ivory-colored mountain cheese (semi-hard cheese) with sparse perforations made from cow's milk (44–47% fat in dry matter ) from Graubünden in Switzerland . It has a gray-white rind, is cultivated with a white mold culture and has a spicy, delicately crumbly and pleasantly mildly sour taste.
