Hangtown Fry
Hangtown Fry is a special omelette that, in the traditional version, consists of eggs, ham and oysters , with all ingredients baked together in the pan. This dish was the time of the gold rush in California invented in the 1850s and popular. It's on the menus of many fine American restaurants today.
There are several legends about the origins of the dish, but historians attribute the invention to a chef in what is now Placerville , who was first called Old Dry Diggins and then officially called Hangtown due to the frequent executions in the place. In 1849, a successful prospector who suddenly got rich is said to have asked for the most expensive meal in the local El Dorado Hotel. The chef replied that the eggs brought in from far away, the ham from the American east coast and oysters were the most expensive things the kitchen had to offer. From these ingredients he then created the omelette. Later versions of the basic recipe also contain onions, peppers and various spices.
