Havarti

Havarti is a spicy Danish type of cheese made from pasteurized cow's milk (30% or 45% dry matter). It is one of the most famous Danish cheese specialties. It enjoys PGI status in the European Union , for which it must be produced in Denmark and matured in maturing stores in Denmark.

This cheese was named after the farm of the farmer Hanne Nielsen, who developed it in the middle of the 19th century.

Havarti is a semi-hard cheese with irregular, small holes, similar to Tilsiter . In Germany it is available in pieces or in slices in different versions: pure, but also mixed with different ingredients such as dill, caraway or chilli.

This cheese takes about a month to mature. It has a thin, natural rind that is sometimes given a red wax coating. Havarti is usually pressed into blocks, but is also shaped into loaves.
