Yeast brandy

Yeast brandy (also Drusen brandy or brandy from lees ; French Lie ) is a schnapps made from the yeast residue . The lees, also known as lees or lees , remain in the barrel after the fermentation phase of the fruit must .

According to the EU regulation , yeast brandy may only be obtained by distilling wine or fruit lees. The alcohol content must be below 86 % by volume and above 38% by volume. It is neither allowed to add alcohol, nor may the yeast brandy be flavored. Allowed for color matching caramel be used.
