Herrgårdsost is a Swedish semi-hard cheese and can be translated as “ mansion cheese ”. It can be assumed that it was traditionally made on larger farms in central and southern Sweden .

Herrgårdsost is the size and shape of a wagon wheel. It weighs between 12 and 20 kilograms. The cheese has a firm consistency , is pale yellow in color and has holes the size of a pea . Its natural rind is yellow and thin.

Herrgårdsost is made from pasteurized cow's milk . The milk is thickened with rennet , the curd is cut, heated while stirring and pressed into its shape. It then matures for at least three months. Its ripening time can be extended, then the consistency of the dough becomes firmer and the cheese more flavorful.

The cheese Grevé (pronunciation: Grewe ), also from Sweden, is very similar to Herrgårdsost . It differs little. It is also shaped like a wagon wheel, but a little smaller. It takes ten months to mature and has a mild aroma.

Herrgårdsost has a mild, slightly nutty taste and usually has a fat content of 28% fat i. Tr. In Sweden it traditionally belongs on bread for the packed lunch. Herrgårdsost with a higher fat content is also very suitable for gratinating casseroles.
