Kabayaki ( Japanese 蒲 焼 き ) is a Japanese fish dish, especially with eel-like fish. Kabayaki is a type of teriyaki ( 照 り 焼 き ).
Kabayaki has been eaten since the Edo period , which is why it is now one of the traditional dishes of Japanese regional cuisine. Kaba ( 蒲 ) means broad-leaved cattail in Japanese. The dish, half a boned eel, resembles the appearance of a cattail, which is where the name comes from.
