Kalathaki Limnou

Kalathaki Limnou ( Greek Καλαθάκι Λήμνου ) is a Greek brine cheese from the island of Limnos with a protected designation of origin . The cheese is characterized by an aromatic and slightly sour taste.

Kalathaki Limnou is made from sheep's milk or in lower quality in combination with goat's milk, whereby the goat's milk must not exceed 30% of the total weight. The small, white, barkless heads have the structure of cups. In the past, special straw baskets (Καλαθάκι 'baskets') were used, today plastic baskets are common. The compact dough is interspersed with fine cracks and small holes. With a water content of 56%, the fat content is at least 43%.

Forty-five to sixty minutes after adding rennet , the 33–34 ° C warm milk is no longer agitated. The curd is poured into typical baskets to drain. After draining, the cheese is removed from the baskets, salted, placed in metal containers and covered with brine. The cheese first ripens for about three weeks at 14-18 ° C in ripening rooms and then for another two months in cooling chambers at 6 ° C.

Although Kalathaki Limnou has a protected designation of origin, cheese with the same name is also produced outside of Limnos and can be found in the range of large supermarket chains.
