Kefalotyri ( Greek κεφαλοτύρι , "head cheese") is a type of Greek hard cheese with a salty and slightly sweet taste .

Kefalotyri is made from the fresh milk of sheep and goats - separately or mixed. This cheese is ideal for grilled or fried dishes as it does not melt too quickly.

Kefalotyri originally comes from the island of Kefalonia and is comparable to the Italian Pecorino . Today he is an integral part of Greek cuisine and is (next to feta ) to prepare the appetizer Saganaki used.
