Korbkäse , also known as Harzer Korbkäse, is a mild German sour milk cheese with white noble mold rind and noble mold crossbar. Basket cheese has a similar consistency and taste to Harz cheese , which is produced using a similar process. Basket cheese is cylindrical, approx. 8 cm in diameter and 3 cm high and weighs 200 g per piece. Depending on the degree of ripeness, the consistency changes from crumbly to jelly-like and the color changes from initially white to brownish. Basket cheese is very lean and contains only 1% fat in the dry matter.
