Koshihikari ( Japanese コ シ ヒ カ リ or 越 光 , dt. "Light from Koshi ") is a type of rice that is grown in Japan but also in Australia and the USA .

Koshihikari was first bred in 1956 from the combination of the two different rice varieties Nōrin 1-gō ( 農林 1 号 ) and Nōrin 22-gō ( 農林 22 号 ) in the Fukui Nōji Kairyō Jikkensho ( 福井 農 事 改良 実 験 所 , " Agricultural Improvement Research Institute Fuk "). The variety increased in popularity, partly due to its good looks. Today it is one of the most widely planted varieties in the country and its taste varies depending on the region. Koshihikari, which was grown in the Uonuma region of Niigata Prefecture , is one of the most expensive rice varieties in Japan.
