Lavaschak

Lavaschak (or Lavāschak , Persian لواشک Lawaschak , DMG Lavāšak , literally: Kleines Lavāsch ) is the Persian name for a thin, firm and dried plate made of pure or mixed fruit pulp such as plums , apricots or pomegranate . The mass of overcooked fruit is salted, pressed through a sieve, leveled about two millimeters high and dried until it has cooled down, is tough and firm. Lavāschak is available in Persian cuisine in the variants sweet, sour and sweet and sour. However, the acidic version is preferred.

From a nutritional point of view, Lavāschak is an extract from various fruits. For generations, lavāschak has been prepared in the traditional way in the home. It is now being produced industrially and its quality is checked by the state .
