Le Viandier

Le Viandier, 14th century

Le Viandier (often also called Le Viandier de Taillevent ) is a medieval recipe collection and as such, similar to Ménagier de Paris and Du fait de cuisine, a key work for opening up the food culture of the Middle Ages . The recipe collection is often attributed to the French court chef Guillaume Tirel , better known under the name Taillevent. However, it is now certain that the oldest version of this recipe collection was created before 1320 and thus shortly after or before the birth of the waist event.

The original author of Le Viandier is unknown. This is not uncommon for medieval and early modern recipe collections. It was also customary for these manuscripts to be published in later writings together with new material as the work of a later author.

A total of four major versions are known of Le Viandier . The oldest, which appeared before 1320, is in the Bibliothèque nationale de France . The so-called Vatican manuscript, which was republished in 1892 by Jérôme Pichon and Georges Vicaire, is somewhat more recent .
