Legumier

As Légumier (v. French. : Legume , vegetables') is called in a kitchen brigade the vegetables cook.

He is responsible for the preparation of all kinds of vegetables . The spectrum ranges from stuffed vegetables to mushrooms to purees made from legumes .

In small to medium-sized restaurants, this work is often done by entremetier .
