The Lippische Strohsemmel , also Lemgoer Strohsemmel , is a culinary specialty from the city of Lemgo , which is not only produced there, but also in other places in Lippe . The recipe for the straw roll is said to have been brought to Lippe by a soldier and journeyman baker from the Napoleonic campaign against Russia in 1812. He had baked rolls as provisions for the troops and, according to Russian custom, scalded the pieces of yeast dough to ensure a longer shelf life. Since he didn't have a baking sheet, he used a layer of rye straw when baking. The Lemgo master baker Kracht managed to acquire the recipe and the manufacturing rights. At first the recipe could be kept secret, but as early as the middle of the 19th century, straw rolls were being sold in several cities in Lippe. Even today, the Lemgoer Strohsemmel enjoys great popularity, not only in Lippe, and is eaten with sausage, ham, honey, jam or butter.
