Melanzane ripiene 'stuffed aubergines ' , called Melangiani chjini or Mulingiani chini in Calabria , is a typical dish of Calabrian cuisine, which is particularlywidespreadin the greater Reggio Calabria region. It is served as an antipasto or main course and can be eaten hot, warm or cold.

preparation

Medium-sized eggplants are cut lengthways in half and boiled in water. After cooling, the pulp is removed and made into a dough together with soaked bread, eggs, goat cheese, chili peppers, chopped garlic, parsley, basil and salt, which is then filled into the bowls. The aubergines are then fried with olive oil. Another variant is the filling with stockfish , ricotta, vegetables or potatoes.

The dish was included in the Prodotti agroalimentari tradizionali italiani (PAT) list of traditional agricultural and food products by the Ministry of Agriculture, Food and Forestry Policy .
