Mild onion of the Cevennes
The mild onions of the Cevennes ( French Oignon doux des Cévennes ) is a variety of the onion ( Allium cepa ) that is native to France . The area of the appellation is limited and includes 31 communes in the department of Gard . The rectangular terraces a few hundred meters in size, surrounded by dry stone walls, are characteristic of the Cevennes landscape .

The onion of the Cevennes is characterized by a shiny, fine and transparent outer shell. The color range of the bowl ranges from pearly white to copper-colored. The onion bulb is large and rounded to diamond-shaped. The inner layers (leaves) of the large and mild-tasting onion are thick and have a white, medium-firm and juicy flesh. The onion can be stored because the dry matter content is below 10%. The mild onion of the Cevennes can be eaten raw and is characterized by its crisp meat and fine and balanced flavors. It is neither hot nor bitter. When cooked, it retains its shine, becomes translucent and soft, and also juicy and sweet in the mouth. It tastes with chestnut and balsamic roasted aromas without forming bitter substances .

Every grower acquires a certificate of competence from INAO , the National Institute for Controlled Designations of Origin. The institute thus covers everyone who is involved in the “Milde onion of the Cevennes AOP” chain. The institute identifies in advance all the plots on which the onions will be grown. Identification is based on criteria relating to the location of the parcels within the growing area and the conditions for production defined in the specifications for the designation of origin. Applications for identification must be signed before December 31st, preceding the year of cultivation. The grower keeps a cultivation journal over the entire sowing , growing and harvesting cycle, in which all work on the individual plots must be entered. The onions must have been sown, raised and packed within the defined geographical area; the onions are harvested by hand. Marketing may not begin before August 1st of the harvest year . The seeds come from the registered varieties Cénol and Toli or are propagated through our own offspring.
As a name for agricultural products, the Oignon doux des Cévennes was granted the Appellation d'Origine Contrôlée (AOC) in 2003 . On November 13, 2007, an application was published under Article 6 (2) of Council Regulation (EC) No. 510/2006 on the protection of geographical indications and designations of origin for agricultural products and foodstuffs for a protected designation of origin . In 2008, the onion was declared an Appellation d'Origine Protégée (AOP) within the European Union .
Acreage
The geographical area demarcated for cultivation covers 54,000 hectares. The number of market participants is 133, including 130 growers and 3 sales companies. The pure production area is 41 hectares, on which an average cultivation amount of 2000 tons is produced.
