Niva (cheese)

"Niva" blue cheese

Niva is a Czech and Russian blue cheese . This cheese made from cow and sheep milk is similar to the French sheep cheese Roquefort . It is widespread in the Czech Republic and, in addition to direct consumption, is often eaten as a spread (" třená niva " - niva grated with butter or margarine).

It contains around 53 percent dry matter , 43 percent fat in dry matter and 22 percent protein .
