Okinawa Soba

Okinawa Soba ( Japanese 沖 縄 そ ば ) are relatively thick noodles from Okinawa Prefecture , which are not made from buckwheat like soba noodles from Japan , but from wheat . These noodles, but also the noodle soup made from them, are called Okinawa Soba . They are similar to the noodles called udon in Japan . On the Yaeyama Islands , in southern Okinawa, the noodles are round in cross-section and are also called Yaeyama Soba , while they are somewhat flattened on Okinawa Island and the other islands.
