Brine injector

A pickle injector (also Pökelspritzmaschine called) is a machine with the brine in meat or vegetable is injected.

The meat or vegetables are placed on a rake. After being fed into the machine, the needles (inner diameter> 1 mm) are inserted into the food. When the needles are withdrawn, the brine is injected with pressure. Depending on requirements, there are between one and over a hundred needles in the needle bar; In addition, the width of the machine varies so that larger pieces can also be cured .

Safety and hygiene requirements for curing injection machines are described in the DIN EN 13534 standard in December 2006 and was renewed in February 2011.
