Ponnukaka

A pönnukaka (plural pönnukökur ) is an Icelandic pancake .

Pönnukökur, like crêpes, are baked very thinly. In contrast to most European recipes, the dough also contains rendered butter, so that only little fat is used in the preparation. A special pan should not be missing in any well-stocked Icelandic household.

They are offered með sultu (with jam, preferably homemade wild blueberry jam) or með þeyttum rjóma (with whipped cream), both of which are also available together. They are also often sprinkled with sugar and eaten rolled up.
