Parisienne (kitchen)

In classic French cuisine , Parisienne or à la parisienne is a relevé garnish consisting of potato croquettes and artichoke bases , which are filled with a julienne of mushrooms, salted tongue and truffle.

Parisienne is also called vegetables, which like z. B. the pommes parisiennes with the so-called Paris knife , a cutter with a hemispherical trowel, were cut into pearls.
