Piperade

Piperrada

Piperade or piperrada is a traditional Basque ( Aquitaine ) dish made from onions, garlic, tomatoes sautéed in olive oil and sweet peppers , poured over with beaten eggs and then has the consistency of an omelet .

Also known today as a dish in vegetarian cuisine , it is typically added to fried Bayonne ham cut into strips . Piment d'Espelette (a small red pepper from the municipality of Espelette ) should be used to prepare the dish in its original form . This type of pepper omelette can be served as a main course or as a side dish.
