The pissaladière is a kind of onion cake and a specialty from Nice , which is widespread beyond the city, in southern France and Italy.

On a dough similar to pizza , next to tomatoes and sliced ​​onions, the so-called pissalat , finely pureed anchovies , is spread, plus a large number of black olives . Alternatively, whole anchovy fillets can be used.

The pissaladière is freshly made and sold every day in the market and at many stalls in the city. It can be served warm or cold.
