Protein hydrolyzate

A protein hydrolyzate is a complex mixture of peptides of different chain lengths and free amino acids . Its production is based on proteins of vegetable, animal or microbial origin by hydrolytic cleavage of the corresponding proteins using specific or unspecific proteases . The degree of hydrolysis varies depending on the enzyme used and the reaction conditions (including temperature and reaction time).

Proteolysis

The complete hydrolytic breakdown of proteins and peptides to amino acids, catalyzed by proteases, is called proteolysis . In the case of non-enzymatic proteolysis under strongly acidic or alkaline conditions, however, some amino acids can decompose.
