The OVIN is in a small cheese factory in the village of OVIN in the Asturian municipality of Nava produced.

Manufacture and maturation

The cheese is usually made from pure goat milk. During the lamb season, the goat's milk may be mixed with sheep's milk to ensure production.

After pasteurization, the milk is mixed with rennet substitutes and yeast, making this cheese also suitable for vegetarians . The curd , which has drained but is still moist , is placed in molds with grids, in which it is also turned to create the typical fluting on both sides . Now the still young cheese wheel is bathed in a brine and then left to mature for around 30-40 days in cool but damp maturing chambers.
