Sîrbuşca

Sîrbușca , internationally Sirbusca, ( Russian : Сырбушка) is a tomato soup from Romania and the Republic of Moldova . It is usually served warm or hot as a starter. The basic ingredients include tomatoes, potatoes, onions, carrots, parsley, salt and pepper.

In Moldova it is a national dish. The soup is prepared there without meat and with a high proportion of whey , with sheep whey being replaced by cow whey in modern kitchens. In Romania and in international cuisine, bacon and chicken bouillon are also added as animal additions instead of whey.
