Zarzuela

Sarsuela or Zarzuela ( Eng . Singspiel ) means on a Catalan menu a fine selection of different types of fish and seafood, which are fried with onions, tomatoes, peppers and garlic and then cooked with a dash of wine.

The name is based on the stage genre Zarzuela to make it clear that this delicacy is something festive, very special.

It may also contain a small amount of peas or asparagus.

A zarzuela is prepared and served in flat pans with two handles, occasionally also in clay bowls.
