Sauce thickener

A sauce thickener (also called instant sauce thickener ) is a powder based on cornstarch and emulsifiers that is used to thicken sauces . It is simply stirred into the briefly boiled sauce.

Essentially the same effect can be achieved with a classic roux , with flour butter or cornstarch mixed with cold water, but sauce binders have the advantage that they do not clump and are therefore easier to use. In the fine kitchen, a sauce binding with cream or egg is preferred to flour binding.

Dark sauce binders also contain colorings, mostly caramel .
