Black nuts are candied walnuts . The green, unripe nuts are ready for harvest until shortly before St. John's Day at the end of June. They should still be easy to pierce completely. The later hard nutshells are still soft at this stage, as are the nut kernels.

In a complex process, the first pierced nuts are watered for days or weeks, with the water being changed daily. Then the nuts are poured with sugar syrup with spices, which is boiled several times - without the nuts. The nuts, which have now turned black, mature in the syrup for several weeks or years and are a delicate accompaniment to roasts, but also to desserts.
