The sig is a by-product of whey cheese production .

designation

Different regional names are known, depending on the place Sig , Sieg or Gsig , in Vorarlberg the name Sig is common, in the Bregenzerwald forests chocolate , in Switzerland alpine chocolate . In times of need, Sig was used as a substitute for chocolate or energy bars, which - in addition to its color - contributed to the name.

Manufacturing

After the sweet whey has been separated from the remaining protein ( Ziger ), it mainly consists of lactose . The whey is stirred and reduced over high heat for several hours. The end result is a slightly caramelized , viscous mass.

use

The sig has a very intense whey taste and is brown in color. It is eaten like chocolate or as a candy. Its consistency is reminiscent of marzipan. In the upscale cuisine of Vorarlberg you can often find a Sig Parfait on the menu. Just like whey , Sig is said to be good for stomach and intestinal problems and is therefore also a home remedy.
