Smooth food

Smooth Food ( . English smooth = smooth, soft; food = food - ie: soft food) is a system developed by 2010 concept to people targeted with lasting chewing and swallowing disorders with techniques of molecular cuisine tasty, to be able to make well-designed and healthy food options . The target group essentially extends to old people, but also to sick people.

Even people with severe swallowing problems should be able to enjoy a positive taste experience in this way, or in some cases also a return from tube feeding. Sometimes attempts are made to recreate "real" foods (e.g. chicken thighs or sausages), or at least a visually appealing design, e.g. B. similar to a pie. As a basis, classic foods, from raw to cooked, are crushed as gently as possible by pureeing, straining or other processes and then offered as a stabilized foam or jelly. The natural, texturizing substances used here (obtained from algae, soybeans or plant fibers) can be used to achieve permanent, cut-resistant structures that first melt in the mouth and are then easy to swallow again.

Since these texturing substances are available in stores, it is also possible for family members to create these food replicas using existing recipes and available forms.

As part of an EU-funded project, it is also about using 3-D printers to produce such food.
