Sopa paraguaya ( Guaraní : Sópa Paraguái ) is a type of corn bread from Paraguayan cuisine. The consistency of the finished dish is similar to a soufflé .

Sopa paraguaya is mainly made from cornmeal, cheese, fat, eggs, butter and milk. In addition, there is a multitude of regional and local variations.

Surname

The name translates as "Paraguayan soup". How the misleading name came about is not exactly known. The story is widespread that one day the personal chef of the former President of Paraguay, Carlos Antonio López , mixed too much cornmeal into the president's favorite soup and without further ado made bread out of it, and served it as a “strong soup”. The president is said to have been enthusiastic and unceremoniously baptized it "sopa paraguaya".
