Soumbala is a spice that is common in several West African countries, particularly Mali and Burkina Faso . It is made from the seeds of the Néré tree ( Parkia biglobosa ), which are fermented for several days . Soumbala is traditionally sold in balls and can be kept for a few months. The industrially manufactured bouillon cubes are a competitor to Soumbala, but they are poorer in proteins and trace elements . That is why soumbala is common again today.
