Spaetzle sieve

The spaetzle sieve

A spaetzle strainer is a device for making Knöpfle and thus an alternative to the spaetzle maker or spaetzle press . The spaetzle strainer is a round disc made of stainless steel, aluminum or plastic with round holes (diameter around 8 mm). In Switzerland, a deep, pot-like sieve is used for larger quantities. This device, with three legs, was formerly known as the "sparrow-serpent" in Swabia.

To make the spaetzle , the sieve is placed on a pot of boiling water. The spaetzle dough is placed on the sieve and scraped through the board with the help of a spatula. If the spatula is placed directly on the sieve, short buttons come out at the bottom.

There is now also a spatula with a spacer. The spatula is no longer guided directly on the sieve and the dough is not cut off. This results in longer buttons, similar to spaetzle.
