Shortbread cookies is a biscuit made from soft Spritzmürbeteig , by temper rolling is brought into shape. Shortbread biscuits include biscuits, bear paws, flaming hearts and letter shapes ("S" biscuits).

Manufacturing

To make the shortcrust pastry sprayable, you add a portion of liquid - up to 25 parts of water to 100 parts of flour - in the form of eggs or milk . Part of the flour is replaced with starch to make the pastry more tender. The dough becomes soft due to the addition of liquid and can be dressed into small circles or sticks or larger pieces of pastry through a perforated or star nozzle (for example with a piping bag or a meat grinder with a special attachment). As with all shortcrust pastries, you have to keep the dough cool and work up the dough pieces quickly so that the dough does not heat up too much. The passable mass should be processed quickly after completion, otherwise it will be tough.

The baking time is short; larger pieces such as flaming hearts are slightly longer than small ones. Depending on the size, the dough pieces can be baked for about 5–15 minutes without steaming them.

After baking and cooling, the shortbread cookies can be decorated with a chocolate coating or icing . In addition, colored sugar pearls or the like can be applied.
