Stovies is the name of a Scottish leftover stew .

The recipes and ingredients vary greatly, but the basis is always potatoes , which are fried with onions in lard or butter after cooking . Most of the time, other vegetables such as carrots are added, including beef or lamb , which can be replaced with cheese.

Traditionally, it is served with oat biscuits .

Surname

The word stovies comes from the Scottish ; the verb 'stove' means 'to stew'. The dish is sometimes referred to as stovie potatoes in English .
