Taguella

Baked Taguella

Taguella is the name given to the Tuareg (especially in Algeria ) making bread when they are on the move. The term also applies to a court. The simple ingredients, flour, salt and water are mixed in a bowl. A bread dough is kneaded from this. A fire of copious amounts of wood is lit and burns down. The resulting charcoal is cleared aside and a pit is dug in the sand below. This is where the dough is placed. The pit is closed again with sand and the charcoal is pushed over it. The bread is baked on both sides and therefore turned once.

Onions, tomatoes and meat are cut, fried and poured with water.

The fried bread and the sauce make the dish taguella.
