Ticino bread

Ticino bread ( Italian pane ticinese ) is a white bread from the Swiss canton of Ticino .

The bread has been popular since the 20th century and consists of pieces that can be easily broken off.

The dough consists of semi-white flour , water, yeast and salt. There are also variants that are prepared with other types of flour (white flour) and / or with additional oil (usually sunflower oil).

The dough is cut up during preparation, and four to six pieces of the same size are put together so that the yeast fermentation causes these pieces to touch each other to form a loaf of bread again. The surface of this loaf is cut lengthways with a knife and can also be brushed with egg before baking.
