Tokoroten ( Japanese と こ ろ て ん , 心 太 or 瓊脂 ) are noodles made from agar agar and eaten cold, in Japan as a refreshing snack , especially in the summer months. Soy sauce and mirin (sweet) or vinegar (sour) are added as a dressing , sometimes garnished with a drop of Japanese mustard and finely chopped spring onions . Tokoroten can also be found as a side dish in Japanese desserts.

The Tokoroten noodles are available pre-packaged, but can also be made from a block of agar (Japanese edges ) using a special Tokorotentsuki ( と こ ろSchneid ん つ き ) cutting device.
