Tomme de Savoie

The Tomme de Savoie is a French cheese made from unpasteurized cow's milk. Since 1996 it has been bearing the EU community symbol for products with protected geographical indications (French Indication Géographique Protégée (IGP) ). This cheese is produced in the Savoy region and is usually made directly on the mountain pastures . Its dough is compact, cut-resistant and characterized by small holes. It is the only Tomme cheese that is partly skimmed and offered in different fat levels (10%, 15%, 20%, 25%, 30%, 48% fat in dry matter and whole milk cheese). The annual production amounts to about 6000 tons, of which about 500 tons come from smallholders.
