The minimum ripening time of the Valais raclette cheese is 12 months after salting at a temperature of 4 to 14 ° C and a relative humidity of 70 to 80%.

The cheeses are stored on raw red fir boards, which are washed and dried regularly, with the cheese wheels constantly being turned and lubricated with a soft brush. At an age of 3 to 4 months, the cheeses are placed in a water bath for about 25 to 30 minutes, depending on the degree of ripening, with the water temperature being 22 C to 25 ° C. The bark grease is then brushed off mechanically or manually. After a drying time of 12 hours, the cheeses are rubbed with a mixture of 2/3 vegetable oil and 1/3 seasoned table vinegar. After a further drying period, the cheeses are stored upright in special racks.
