White cleaning

The white cleaning (main cleaning ) is a method of processing grain in a mill . The mustache and parts of the outer shell ( cellulose ) are separated from the grain . The dust is then removed with air ( aspiration ). The white cleaning is done with a scrubbing machine, peeling machine or brushing machine and is based on the principle of surface friction. Then the grain is wetted with water (conditioning) and left to stand for a while. The water content should then be between 16 and 17.5%, depending on the type of grain or wheat. Since approx. 1.5% moisture evaporates during grinding (depending on the temperature and relative humidity), the flour moisture will be around 14.5% after grinding.
