Yuba ( Japanese 湯 葉 ) is a protein-rich specialty of Japanese cuisine .

It is made as follows: Heated soy milk forms a skin in rectangular tubs, which is carefully peeled off, hung on thin sticks and dried. When dry, the rectangular milk skin sheets are then folded or rolled into sticks.

For consumption, the leaves are moistened with a cloth and the chopsticks are soaked directly in water.

Yuba has a creamy, nut-like taste and is a meat substitute . Yuba is also used to wrap other food in it, which can then be fried, steamed or deep-fried. With their brown grain, the deep-fried Yuba chopsticks are similar to bamboo wood and are then also called bamboo.
