Finish (wine)

The finish (also known as the final ) is the name given to the persistence of the flavors and aromas that a food leaves on the palate after being swallowed . When it comes to the finish, we talk about wine . This aftertaste is an important indicator of the quality of a wine: the more persistent, the better. However, the term is considered very negative among sommeliers because of the prefix ab . The word reverberation or finale is therefore preferred in wine language . If it fades away quickly, it is called a short or abrupt finish ; if it fades away, it is called a long finish .

Together with the fragrance, the acidity, the tannin and the diverse aromas, wines sometimes have a pronounced finish that lasts for minutes and corresponds to the grape variety and cellar technology.
